Whether it be prawns, scallops, fish or crabs, seafood is a quintessential part of the Australian diet.

Despite not having any experience in selling, or even eating seafood, Stephanie and Ed Walker bought Rufus King Seafoods, and have helped it grow from strength to strength. 

They're now the local experts on cooking all things under the sea, and we caught up with Steph to find out a bit about the fishy business. 
 

 

What advice do you have for people cooking seafood?

The biggest mistake I find that people make while cooking seafood is that they tend to overcook it. 

It can be due to a number of things - sometimes it could be because the pan was too hot, or it was just left on far too long. 

It isn't just fish either - prawns and scallops can be easily overcooked. 

My advice is to really make sure you're cooking it at the right temperature for the right amount of time - then you'll end up with nicely cooked seafood every time.
