From raspberry and hazelnut, peanut butter and salted caramel, to the all-time favourite original flavour, Dello Mano started the brownie revolution in the Southern Hemisphere.

Taking a blend of the finest ingredients and a background as a food scientists, the Peralta family use their intuition for taste and flavour to create the perfect brownie.  

All individually hand wrapped, each of the brownies are a little present in themselves and are the perfect gift for everyone (including yourself!)  

“Here at Dello Mano we’re all about handmade delicious food that’s exquisite and memorable,” says owner Bien Peralta.

We caught up with Bien in the beautiful Brisbane City store at Tattersalls Arcade where we asked the big question...

What’s the secret behind making the perfect brownies?

 

How did Dello Mano come about?

My wife Deb and I have both had past experiences working for multi-national food companies. Deb was the head of New Product Development for Cadbury and we met there in the chocolate factory.

I guess you could say it’s all meant to be… a sweet chocolate story!

We’ve always had a big love and passion for food and I guess the seed of Dello Mano was planted when we travelled overseas with our daughters Phoebe and Coco to our favourite place, Italy.

I remember travelling all around Italy, eating all the food, laughing and having the best time.

It was there that we noticed how much they celebrated the gift of the hand-crafted and handmade and from there we knew we wanted to make our own delicacies.

We have always loved brownies (who doesn’t) but we decided the humble brownie needed a little bit of a transformation.

We first set up the business out of the New Farm Farmers’ Markets.

We started off as a gift company, selling brownies across Australia and all over the world.

With each individually wrapped brownie we’re giving everyone a gift – the enjoyment of food.

We were flattered at how well the brownies took off. Celebrities and dignitaries have had them, they’ve been shipped to base camp of Everest and to the frontlines of Afghanistan.

Dello Mano is a family-run business, tell us about that?

The family is very intuitive in terms of food, especially my wife Deb with her background as a food scientist.

We all add our ideas and expertise together to constantly improve the business.

My daughters, who are now 20 and 17, have been in the business since they were six and four years old.

They’ve grown up tasting chocolates, developing a knowledge and palate from an early age.

Over the years they’ve been developing ideas and giving the business the support it needed.

The rest of our staff are like family to us and we’re so lucky to have such great staff members.
